US hotels 'focusing on lobby experience'

9 Jan 2008

An increasing number of hotels in the USA are redesigning their lobby menus to give their establishments a trendy feel, according to reports.

Menus are being adjusted in order to cater more closely to the tastes of people who like to spend time in the lobby of their hotel.

'The energy they're seeking is that of a cocktail party,' Jody Pennette of CB5 Restaurant Group, a firm that designs restaurants for hotels, told USA Today.

A number of hotel chains have tested out new menus for use in lobbies, including Marriott and Wyndham, in destinations as disparate as New York, San Francisco and Texas.

Many establishments are trying to create a more cosmopolitan feel by including international foods on their menus or offering comfortable chairs and intimate tables to emulate the atmosphere of a European cafe, according to USA Today.

'They don't want to come off as flat-footed,' said Mr Pennette of one hotel's food offerings. 'Rather than do traditional pigs-in-a-blanket, there are a lot of options [reflecting] more global awareness.'
