Swiss cooks up new menu for premium passengers

Swiss has unveiled a new menu that has been designed by a leading chef and will be available to its first and premium class passengers.

Pierre-Andre Ayer, the man behind the new range of culinary choices, is a Michelin-starred chef at the award-winning restaurant Le Perolles.

His creations will be available on intercontinental flights in and out of Switzerland and selected return flights until the end of November.

The choices for first class passengers include a starter of pumpkin mousse with aubergine caviar and champignons duxelle, followed by a main course of roast venison with a quince and ginger jus.

In business class, customers will be offered a main course of haunch of lamb with potato puree, botsi pears and green beans, with a white chocolate mousse with caramelised apples and quince jelly for dessert.

Wine lovers will also be able to find something to interest them on the new Swiss menus, with first class passengers offered the award-winning creation of the Tuscan estate of Brancaia – Brancaia Il Blu.
